KC Thorson has been sharing her cooking skills and creating recipes for delicious whole/natural and organic foods dishes for 24 years. After reading the book "Fit for Life" by Harvey and Marilyn Diamond in the mid-80's, KC embarked upon a vegetarian and then vegan style of cooking and eating that spanned 12 years. During this time she experimented with hundreds of vegetable, soy and nut based meals, snacks and desserts with major emphasis on taste.
In the late 90's KC reintroduced fish, organic meats/poultry and dairy back into her diet and cooking lifestyle. As a Regional Manager for a growing insurance company and with working hours becoming increasingly long, KC introduced new fast & easy techniques to her cooking style and significantly decreased her time in the kitchen. As a result, her "fast, easy & delicious" concept was born and she readily began teaching family & friends ways to add natural nutrition without skimping on taste.
An avid reader and student of natural health and nutrition for more than 2 decades, KC has been sharing her cooking tips, style, ideas and recipes with individuals, groups and businesses as K.C.'s Kafe since September 2005. She has created educational cooking programs to help meet the needs of professional cooks, busy individuals, health-challenged families and those embarking on an organic cooking lifestyle. KC has conducted classes, workshops, presentations, wellness seminars and has developed hundreds of recipes to help clients better understand the options they have when confronted with cooking/nutrition challenges, obesity, diabetes/prediabetes, celiac disease, IBS, and other digestive/dietary issues.
In October 2007, KC self-edited and published her second cookbook entitled "Cooking Great for Losing Weight - Delectable Desserts". The book includes her "tried & true" favorites, offering those with weight, gluten, sugar and dairy challenges the opportunity to create and enjoy rich, creamy and chocolatey desserts without negatively impacting health.
Ultimately KC believes that God's plan for us includes the opportunity to make healthful choices as is demonstrated by His provision of the organically grown and raised plants and animals. His whole food sources are naturally equipped with a perfect balance of nutrients and antioxidants designed to provide human fuel, strengthen immunity and build optimal health.
