One of the best-flavoured street food in Mumbai is Vada Paav. It is the vegetarian dish

Ingredients:(6 vada Paav)

Vada:

2 tablespoon oil
3 medium-sized boiled potato
red chilli powder/Kashmiri Mirch
1/4th tablespoon of turmeric
1 tablespoon of ginger garlic paste
1 tablespoon of mustard seeds
5 curry Patta(finely chopped)
fresh coriander
salt as per taste
1 tablespoon amchur powder(dry mango powder)
1 tablespoon Dhaniya powder

1 Paav packet(6 buns)

Besan Mixture:
200 gms besan
1 tablespoon of oil
1/4th tablespoon of turmeric
2 lemon juice

Green chutney:

Fresh coriander washed in freshwater
1 onion
1 tomato
2 green chillies(to make it spicy)-optional
3 pieces of garlic
1 piece of ginger
salt as per taste
red chilly powder

Vada Paav Chutney(Garlic coconut chutney)

1 small-sized coconut(grate it fine)
1 teaspoon of red chilli or dried chilly(2)
4 pieces of garlic
peanut(50 gms)

Procedure:

Vada stuffing:

1. Boil 3 medium-sized Potato in cooker.
2. Take a Pan and add 2 tablespoons of oil
3. Add 1 tablespoon of Mustard seed, let it crackle
4. Add 5 curry Patta finely chopped
5. Mash 3 boiled potato and add to the pan
6. Keep your gas at slow
7. Mix the mixture
8. Add 1 tablespoon of Dhaniya powder and 1 tablespoon of amchur powder
9. Add 1/4 turmeric powder
10. Add red chilli powder and salt as per taste
11. Finally, add fresh coriander to the mixture
12. Turn off the gas and allow the mixture to cool properly

Besan Mixing:
1. Take a bowl and add 200 gms of besan.
2. add 1 tablespoon of oil
3. add 1/4th turmeric powder
4. add a little amount of water
5. Make sure you make a batter somewhat tight for making vada
6. Finally, add lemon juice to the batter
7. keep the batter aside for 10 minutes

Vada:

1. Take a pan and add oil for frying
2. Take a cooled mixture of vada stuffing and make small balls (size around 1 tablespoon)
3. Take a besan batter and dip one small ball into it
4. Once the oil becomes hot, keep your gas on the medium flame and add small balls to the pan
5. Do not touch the balls, let it fry properly
6. turn on to another side if one side is brownish in colour
7. after 10 minutes, take vada out from the pan
8. Similarly, fry all the vada

Green Chutney:
1. Take a Grinder
2. Add fresh coriander leaves to the grinder
3. Add 2 green chillies(optional), 1 onion chopped,1 tomato chopped, 4 garlic pieces,1 ginger
4. Add salt and red chilly as per taste
5. Grind the mixture
6. your green chutney is ready

Coconut garlic chutney:

1. Take a pan and keep the gas on low flame
2. Add grated coconut and fry
3. Take fried coconut out from pan after few seconds
4. In the same pan on low flame, fry 4 garlic
, 2 dried red chillies.
5. Take them out of the pan
6. In the same pan on low flame fry peanuts
7. take a grinder and add fried coconut, garlic, dried chilly, and peanuts
8. Grind the mixture
9. Your coconut garlic chutney is ready

We are ready with both chutney and vada. Now take a one paav and apply green chutney and coconut garlic chutney. Take one vada, gently press it and place it between the paav.
