At the end of the day, if you're looking to gain muscle or lose fat, your caloric intake and macro intake is going to be indicative of whether or not you achieve your goals or not. So many times, people believe that they know exactly how much they're taking in. However what is usually the case is that they are way off when they start to document what they've taken in. This is why I feel keeping a dietary journal is so important. Although you may think you know what you're getting, unless you write it down you won't know for sure.

Also, make sure you're writing down everything that passes your mouth. This includes every drink you drink, and everything you season your food with. So many times people forget to include the juices and sodas that they drink, or even the alcohol or wine that they drink, and this can really throw off your results.

So if I could offer one piece of advice to help you with your plan, it's going to be to keep a food diary. The more you document, and the more detail oriented you are the better your results.
