The visual appearance is the only difference between magic mushroom and magic truffle. Magic truffle is not real truffle, but is the sclerotia of the psilocybe mushrooms that grow below the ground. Actually, they are an underground part of fungus identical to parts growing above the ground (actual mushroom).

Magic Truffle is popular as ‘Philosopher’s Stones’. Where the actual mushroom grows, there is an extensive network of mycelium. Mycelium is a mold, which when gets exposed to specific conditions make the mushroom grow. You can say mushrooms are the fruit of white, stringy structured mold called mycelium. Magic Truffle is actually a dense mass of solid mycelium. Water and food gets stored in this hardened mycelium, which can be used in adverse growing conditions.

On the earth, 200 varieties of mushrooms are identified to include psilocin and psilocybin. Among these only few are capable of producing Magic Truffle. The popular ones are Psilocybe Atlantis, Psilocybe Mexicana, and Psilocybe
Tampanensis.

After the Truffles are harvested, it contains 50% to 70% of water. Dried Magic Truffles weighs only 30% to 50% of its original weight. The difference is due to the kind of strains and how truffles are bred.

Truffle growing science
Truffles have been commercially grown for decades because the science of establishing a truffiere is still not understood. It is because of complex symbiotic rapport between fungus, soil, climate, and tree, which happens out of sight (underground). Established growers suggest the basic requirements for growing Truffles.

• Truffles prefer soils with high pH and well aerated ground
• Soil test is needed prior planting to detect the mineral contents, nutrients, and soil texture
• An irrigation system will be needed, if the soil dries out in mid summer
• Site has to be free from potentially competing fungi
• Truffle cultivation is new and may take trials and errors along with a lot of patience

Buying, eating, and storing Truffles
You can easily buy them from special stores that import fresh and refrigerated truffles. The season for white truffle is September to December and black truffle runs from December to March.

As the truffles flavor strength decreases quickly, after harvesting, you can store them in freezer-proof glass jar or its pungent smell can penetrate eggshells in the refrigerator. Moreover, it can be stored for a fortnight in bland oil.

Actually truffles are best, when eaten fresh and uncooked soon after harvesting. Wash them gently and brush out the soil to eat them as soon as they are removed from the soil. Truffles need to be spotless because you will need to eat them unpeeled.

While you serve them with other foods just grate it directly into soups and sauces, prior eating. Cooking it damages the aroma and flavor, so keep it away from heat.
