Kashmiri Biryani:

Ingredients:

• 750 gms Mutton
• 1 kg Chicken
• 1 kg Basmati rice
• 200 ml Milk
• 2 tsp Curd
• 1 tsp Dry ginger powder
• 1/4 tsp Cardamom powder
• 150 gms Ghee
• 1/4 tsp Kewra essence
• 2 gms Saffron
• 2 tsp Red chilli powder
• 1 Pinch asafoetida
• 1 tsp Garam masala powder
• 2 tsp Fennel seed powder
• 1/4 tsp Sugar
• Salt to taste

Method:
1. Heat ghee in a pan and add asafetida followed by mutton
2. Add curd to the mixture and fry.
3. Pour water and add salt to taste.
4. Add chilli powder, ginger powder and bay leaf.
5. Fry for a few minutes and add 1/2 litre water.
6. Add 1/2 tbsp garam masala and 1tbsp fennel seeds.
7. Let it cook on low flame for 10 minutes.
8. Remove the mutton pieces and keep them aside.
9. Boil 2 litres of water with 2 tbsp salt.
10. Make a potli of garam masala and remaining fennel seeds and boil it in a water.
11. Now add rice and cook on low flame till half done, filter the water. .
12. Alternately arrange mutton and rice layers in a baking tray.
13. Add milk and ghee.
14. Cook in a preheated oven till well done.

Sookhe Aloo ki sabzi

Ingredients:

• 1/2 tsp Mango Powder
• 3 tbsp Oil
• Salt to taste
• 3-4 Kadi Patta
• 5-6 Potatoes (boiled, cubed)
• 2-3 Green Chilies
• 1/2 tsp Red Chilli Powder

Procedure:
1. Heat the oil in a pan. Add kadi pata, green chilies and red chilly powder.
2. Add potato cubes and fry the potatoes until half cooked.
3. When the potatoes turn slightly brown, add salt and mango powder to the potatoes.
4. Let the potatoes cook until they turn crisp and golden brown in color.
