Potatoes Plus Recipe

Ingredients
• 4 medium red potatoes, cubed
• 1 medium onion, cubed
• 1 medium sweet red pepper, cubed
• 1/2 teaspoon seasoned salt
• 1/4 teaspoon garlic powder
• 1/4 teaspoon each dried basil, Spice Islands® Dill Weed and parsley flakes
• 1/4 cup butter, cubed

Directions
1. Mix together vegetables and seasonings; divide among four pieces of heavy-duty foil.
2. Dot with butter. Fold foil around vegetables and seal tightly.

3. Grill, covered, over medium heat for 15 minutes on each side. Open foil carefully to allow steam to escape.

PANEER COCONUT GRAVY RECIPE

Ingredients:

• 250 gms Cottage Cheese (Paneer)
• 3 Onion
• 4 - 5 cloves Garlic
• 1 " long piece Ginger
• 4 Tomato
• Coriander Leaves
• 2 fresh red chillies
• 1/2 tsp Cumin Seed
• 1 tsp Coriander Seeds Powder
• 1/2 tsp Red Chili Powder
• 1/2 tsp Sugar
• 3 tblsp Groundnut (Moong Fali) Powder
• 1 cup Coconut Milk
• 1 tsp Lemon Juice
• 2 tblsp Clarified Butter

How to make paneer coconut gravy:

1. Cut paneer in squares.
2. Grind onions to a paste.
3. Grind tomatoes finely.
4. Grind ginger (adrak), garlic (lasun) to a paste.
5. Chop coriander leaves (dhania patta) very finely.
6. Chop fresh red chillies very finely.
7. Roast the groundnuts and grind them to a fine paste.
8. To make coconut milk, grate fresh coconut and mince in a grinder with 1 cup of water. Sieve the mixture and coconut milk is ready.
9. Heat clarified butter (ghee) in a pan.
10. Add cumin seed (jeera), onion (pyaj) stir it continuously.
11. Add the ginger garlic paste and stir it for 1 minute
12. Now add tomato and fresh red chilly.
13. Cook for sometime and then add tomato (tamatar).
14. Continue cooking it on medium flame till ghee/oil begins to separate.
15. Add coriander seeds powder (dhania powder), red chili powder (lal mirchi), salt, sugar groundnut (moong fali) powder, coconut milk.
16. Add the paneer pieces and let the gravy cook till it thickens.
17. Take off the fire and serve hot garnish it with well chopped coriander leaves.
