Things you will need:
Here is a very simple and yummy recipe:
• Condensed milk 400g
• Fresh cream 100g
• Milk 500ml
• Milk powder 100g
• Sugar 400g
• Pistachio (roughly chopped) 5 tablespoons
• Cardamom powder 1/4 teaspoon
• Saffron
• Sugar syrup for decoration
Kulfi is very high in calories due to its cream and sugar content. For people who like to eat healthfully, the cream can be substituted with milk to make a healthier dessert.
How to make traditional Kulfi ice cream:
1. In a large pan, add milk, condensed milk, and cardamom powder.
2. Dissolve saffron in two tablespoons of warm milk and add to the pan.
3. Make a thick paste of milk powder and three tablespoons of milk and add this paste to your mixture.
4. Bring the mixture to a boil and then add 400g sugar. Keep stirring gently every few minutes. Boil until the mixture is thick. This takes about 15 to 30 minutes.
5. Turn off the stove and set the mixture aside to cool.
6. Beat the cream until it is fluffy. Now gently fold the cream in when the mixture gets to room temperature.
7. Add chopped pistachios and mix well.
8. Traditionally, Kulfi is made on a stick in a conical shape. If you have the mold, put your mixture in that and freeze it for 24 hours.
9. In case you don’t have the mold, simply pour the mixture into any container and freeze it. When it gets half set, use an egg beater to beat up the Kulfi mixture and break the ice crystals. Put back into the freezer again and wait for a few hours until it sets. Ten minutes before serving, take the Kulfi ice cream out of the freezer and set aside.
10. Garnish with chopped pistachios and serve.
11. To make sugar syrup, take four tablespoons of sugar and add four tablespoons of water. Heat the mixture until the sugar dissolves and the syrup gets thick and golden. Cool slightly. Drizzle this over your Kulfi ice cream when serving.
Kulfi makes a very tasty, frozen dessert and is ideal in the summertime. The above recipe can be modified in a variety of ways to get different flavors:
• Replace pistachios with almonds.
Soak the almonds in water for a few hours to loosen the skins. Peel off the brown skins and thinly slice the almonds.
• Flavor your Kulfi with fruits
Skip adding saffron and cardamom powder. Instead, add strawberries or mangoes. Take your favorite fruit, purée it in a blender, and add to the mixture when you are adding the cream.
• Serve with strawberry/mango sauce
Pour some fruit sauce over your fruit ice cream. For this you’ll need pureed strawberries/mango ½ cup and castor sugar 4 tablespoon. Put the ingredients in a pan. Heat for five to ten minutes or until sugar melts. Pour this syrup over your strawberry/mango Kulfi and serve.
