Spam,Bacon and Bean Pasta

This is an extremely simple dish to prepare and it is packed full with all types of nutrients.
It takes about 30 minutes to prepare and this recipe will serve about 4 eager mouths.

Ingredients:
225g dried pasta
1 tsp. Olive oil
1 onion sliced
1 garlic clove
4 rashers bacon 200g can Spam, cubed
200g can button mushrooms, drained
400g can Italian tomato with basil soup
410g can cannellini beans, drained
Seasoning

Method:
1. Bring a large pot of water to the boil, add the pasta and cook for about 12 minutes (See pack for details – as pasta cooking times differ).
2. Heat the oil in a large pan and cook the onion, garlic and bacon for 3 – 4 minutes. Stir in the Spam and mushrooms and cook for a further 5 minutes.
3. Add the soup and simmer for 5 minutes then add the cannellini beans and drained cooked pasta. Stir and serve with a fresh green salad.

Spanish Style Tortilla

This pie-like dish is easy to prepare, healthy to eat and very convenient to have in the fridge. It is stuffed full of great natural ingredients, making it a healthy alternative to Pizza or pasta. It takes a meagre 20 minutes to prepare and cook, and it serves about 4.

Ingredients:
300g can potatoes, drained and sliced
200g can peas, drained
1 small onion, finely sliced
1 small red pepper, finely diced
6 medium free-range eggs
75g cheddar cheese, grated
15g butter
1 Tbsp. olive oil
Seasoning – Salt & Pepper

Method:
1. Heat oil and butter in a reasonably sized frying pan.
2. Add the onion and fry for 3-5 minutes or until onions are just beginning to soften. Add potato and continue frying for a further 2-3 minutes – Then include the peas.
3. Preheat grill – Whisk the eggs together and season well. Pout the egg mixture over the potato mixture. Sprinkle with cheese (Use your favourite kind of cheese – It won’t affect the recipe.), and cook further on stove on a low to moderate heat – For 4-5 minutes until the mixture begins to set.
4. Place the frying pan under the grill and continue cooking until the mixture is golden and just firm in the centre.
5. Slice the dish into pie-sized wedges and enjoy with a simple green salad.

Chicken & Vegetable Philo Pie

This is a delectable straightforward dish that can be made for any occasion or season. It’s a perfect balance between delicious flavour and healthy nutrients. If you have children who are picky eaters – This is a dish for you. Not 1 crumb will remain – I promise. This recipe takes about 45 minutes to prepare and serves 4 people.

Ingredients:
2 x 418g cans chicken in white sauce
1 x 340g can sweet corn, drained
1 x 340g can of peppers, drained
198g can red kidney beans, drained
270g packet frozen filo pastry, defrosted

Method:
1. Preheat oven to 200°C (Or Gas mark 5)
2. Mix the chicken and all of the vegetables together and place into a shallow dish.
3. Cut the filo pastry into squares approximately 15cm square (6”) and scrunch up into rosette shapes, use to top the chicken mixture.
4. Brush with oil or butter and bake for 25 minutes until golden and the filling is heated through.
5. Serve either hot or cold with canned new potatoes and a selection of salad leaves.
