If you think you do not need natural detoxification because you are not exposed to toxic chemicals, you are WRONG. Maybe it is the reason why you get frequent colds, or that you are diabetic, hypertensive, you have cancer or heart disease, or that you are FAT!
All of us are exposed to toxic chemicals in our atmosphere. These toxic substances bring about medical illness which leads to unnecessary expenses, unpaid days off work, low quality of life and death.
Over time, health authorities have been monitoring human exposure to chemicals. In 2001, investigators from the Mount Sinai School of Medicine in New York shocked the world when they found an average of 91 industrial compounds, pollutants, and other chemicals in the blood and urine of nine volunteers, with a total of 167 chemicals found in the group.
The very recent report of the Centers for Disease Control had a lot of key findings about human exposure to chemicals. First, the group found out that there is still widespread exposure to some commonly used industrial chemicals such as polybrominated diphenyl ethers (PBDEs), Bisphenol A (BPA), perfluorinated chemicals (PFCs), lead, mercury and acrylamide. Like most of us, the people tested do not work with chemicals on the job and do not live near an industrial facility.
This is so unfair! We attempt with every means to protect ourselves. But why do we still end up having these toxic substances in our bodies? This is because we fail to take in the most important protectors from toxins and harmful chemicals: vegetables.
There have been reports about raw and cooked vegetables with detoxification activities. One study by Robbins et al (2011) showed that the bioactive metabolites of glucosinolates, such as isothiocyanates, contained in cruciferous vegetables have been shown to reduce the risk of cancers through the induction of detoxification enzymes.
Phytotransformation in plants or vegetables is an interesting process. In the case of organic pollutants, such as pesticides, explosives, solvents, industrial chemicals, and other xenobiotic substances, certain plants, render these substances non-toxic by their metabolism. Plants and vegetables behave similarly to the human liver when dealing with these toxic substances. After uptake of the xenobiotics, plant enzymes increase the polarity of the xenobiotics by adding functional groups such as hydroxyl groups (-OH). This is known as Phase I metabolism, similar to the way that the human liver increases the polarity of drugs and foreign compounds. Whereas in the human liver enzymes such as Cytochrome P450s are responsible for the initial reactions, in plants enzymes such as nitroreductases carry out the same role.
This is why vegetables are so effective in detoxification. However, not all vegetables possess this activity. I have done research on the vegetables and fruits which contains more detoxifying enzymes.
