Vegan oven baked risotto
To prepare this risotto couldn’t be easier than this. Will come out perfect with no time. You can use your primary ingredients to make it.
Ingredients: The main course serves 3-4
• White onion (1/2cup) chopped
• One clove garlic (minced)
• Arborio Rice (1 cup)
• Olive oil (2 tablespoons)
• Pasta sauce (540ml)
• Vegetable broth (2cup)
• Baby spinach (8 cups)
• Toasted pine nuts (For garnish)
• Salt and pepper to taste.
Instructions:
• Get ready with preheating oven to 400F.
• Take a large saucepan on the stove and heat the oil. Add onion and garlic and cook it for 5 minutes until soft.
• Add rice and then pasta sauce to the pan and cook it another 5 minutes. Bring to the boil and stir it well.
• Add vegetable broth, salt, and pepper. And transfer it oven-safe pot. And cover lightly.
• Bake it 30 minutes add Spanish and leave it for another 3 minutes.
• Add pine nuts to serve.
Notes: if you don’t have pasta sauce you can quickly prepare your pasta sauce with stewed tomatoes, Italian seasoning, salt, and sugar.

Oven baked quinoa casserole:
Preparing this vegan recipe is also easy. As it comes together so quickly & you can make it in a one pot. It might take 1 hour to cook. But you can do other work while your food baking in the oven. So let's start with the ingredients
Ingredients: Mexican, main, side, 4 people
• Olive oil (1tablespoons)
• 1 clove garlic (minced)
• 1 medium size onion (chopped)
• Uncooked quinoa (1cup)
• Can diced tomato (790ml)
• Water (1/2cup)
• Tomato paste (1 tablespoon)
• Cumin (1 teaspoon)
• Oregano (1 teaspoon)
• Chili powder (1/2 teaspoon)
• Baby spinach (3 cups)
• Diced avocado (for toppings)
• Can Black beans (540ml) rinsed and drained
• Can corn kernels (311g) with liquid
• Salt and pepper to taste.
Instructions:
• Get ready with your Preheat oven to 350F
• Now get a pan and add one tablespoon of olive oil, onion, and garlic, sauté them for 5-8 minutes.
• Add quinoa to the pan with water, tomato paste, salt and pepper and stir it well until they thoroughly combine.
• Get an oven-safe casserole pan if you weren’t using one and add all the ingredients. Cover it and let it bake it 30 minutes.
• Now remove the casserole pan from the oven and add beans and corn with liquid.
• If its look dries add little water spray to the pan and let it bake again for another 30 minutes
• Remove the pan from the oven. Add it Spanish and let it sit for 3 minutes.
• Then serve it with Diced avocado.
Notes: you can add other toppings to your dishes like vegan sour cream, vegan cheese or cilantro. You can easily keep this baked quinoa casserole in the fridge to enjoy later.
