What You Need
* 4 large sweet potatoes
* 1-2 egg whites
* 1 tablespoon of extra virgin olive oil
* 1 teaspoon salt substitute
* ¼ teaspoon cayenne pepper
* 1 teaspoon ground cinnamon
Baked Sweet Potato Fries Recipe:
Preparation:
Pre-heat kitchen oven to 400F degrees.
Wash and slice the potatoes into chips or thin wedges.
Place the potatoes in a zip-lock plastic bag with the beaten egg white(s)
Close the zipper and shake until well coated
Mix all of the spices together in a bowl
Add the potatoes and toss until the spices are combined with the egg white coating
Add the olive oil to a shallow baking pan
Put the potatoes in the pan
Make sure there is only a single layer of potatoes
Bake in oven for 25-35 minutes
Once the baked potatoes are crisp and golden brown you can remove them from the oven. Before serving add another sprinkle of ground cinnamon. If you want to add a little dipping sauce for these crunchy fries why not combine ¼ cup of low fat sour cream with ¾ cup cinnamon applesauce?
